Penang Assam Laksa is a sour fish-based soup. The soup is wonderfully fishy from mackerel, sour from tamarind and lemongrass, as well as salty, spicy and sweet. The bowl of thick white rice noodles is beautifully and refreshingly contrasted with a colourful garnish of vegetables: cucumber, onions, lettuce and pineapple, then finished off with a large handful of fresh green mint, chopped pink ginger buds and red chilli. For aficionados, add in a large spoonful of hey ko (prawn paste) is perfect!
